Salsa Flavored Chicken Leftovers + Guilt-Free Ice-Cream!

Found a bottle of all-natural salsa so hey, why not add it to my leftovers-dinner? 🙂 Definitely a  slightly spicy but still, terribly tasty meal!

Ingredients:

  1. Brown rice (cooked on Sunday)
  2. Baked Broccoli, capsicum and kale (~300°F)
  3. Dried plain Seaweed + 1 Jalapenos stuffed Olive
  4. Free-range organic fed chicken baked in Trader Joe’s Roasted Garlic Salsa (~300°F)
  5. One 3/4 boiled cage-free egg
  6. Pink Himalayan Sea Salt for taste
  7. So Delicious Coconut Milk Minis (Diary, soy, gluten and almost sugar free!)

I’m starting this new section on my blog because a number of people have been suggesting I share my meals and diet. I don’t follow recipes because I find them time-consuming and restrictive. Instead, I cook in large batches and use whatever is on hand, after intense scrutiny of the ingredients list of course.  ;P
